Squash Casserole and "Summer" a Cross Stitch Freebie

  Come on in and grab a  plate and spoon and let's head to the table!  It's squash season!  Our squash has not come in yet, but a neighbor has been sharing their bounty. Squash Casserole is on the menu as well as biscuits. Oh  bummer, the biscuits are not homemade , but that's ok.  In the oven is pork chops; they will be done soon.   

Happy Friday' y'all and a very lovely day to you. Have you been enjoying fresh veggies straight from the farm or garden yet?  Our garden will be a little later in producing compared to last year; we were late in getting everything in the ground . Anywhoo , we have been enjoying a few variations of the Squash Casserole. It is always fun to experiment. 😋💗

SUMMER SQUASH CASSEROLE RECIPE

INGREDIENTS

5 medium squash , sliced

5 Tablespoons of butter, divided

1 small onion chopped

1 cup of shredded Cheddar cheese

2 large eggs, lightly  beaten

1/4 cup of mayonnaise

2 Tablespoons of sugar

1 teaspoon of salt

1 sleeve of Ritz crackers crushed or about 3/4 cup

DIRECTIONS

1. Cook the squash in boiling water for about 8-10 minutes or until tender. 

2. Drain squash well and gently press between paper towel to remove excess liquid. 

3. Melt 4 Tablespoons of butter in a skillet over medium- high heat; add onion and saute for about 5 minutes or until tender. 

4. Remove skillet from heat and stir in squash, cheese, eggs, mayo , sugar and salt. 

5. Spoon mixture into a lightly greased 11 x 7 inch baking dish. 

6. Melt 1 Tablespoon of butter. Stir melted butter and crushed crackers.  Sprinkle over the top of the casserole evenly. 

7. Bake in preheated oven at 350 degrees for 30-35 minutes or until set. 


Alrighty, now that dinner is on the table, let me show you my newest quick stitch. It is simply called "Summer" .  


 "Summer" has a little blue farm house flanked with tall sunflowers.

 It  is a small stitch  measuring 3 3/8" squared if stitched on 14 count aida . 

I used 7  DMC floss colors which included DMC 815, Blanc, 782, 937, 898, 931, and 3371. I whipped this wee stitch up in just a few short hours.  

I finished mine on as a flat and then just pinned it to a basket which sits by my stitchy spot.

  1. Love the new "Summer" stitch. Very cute, indeed. Your squash casserole looks very yummy. Ironically, I was thinking about pork chops earlier today. Might be time to make some for me. Huge treat for the three of us - me, myself and I. LOL Happy trails in the camper.

  4. I found your wonderful blog and fell in love with stitching your salt box patterns - I am stitching month by month! I have also started several other patterns of yours because they are all so beautiful and fun! On your home page right now there is a salt box of a patriotic house that is a rust (or orange or yellow) color and lots of red, white & blue banners and red, white & blue flowers that I have not seen a pattern for. I would love to stitch that house because it is so adorable.

  5. Sounds like a yummy dinner. Other than herbs, we don't garden. But the Farmer's Market here in town is pretty good, so we find some goodies there. Very fun Summer stitchery. Enjoy your camping time this weekend.

  6. Your dinner looks yum! Your squash casserole recipe is very similar to one I saved back in the early 2000s from Cleburne Cafeteria in Houston. I like your addition of cheese, so I'm going to add your version to my saved one! I'll have to make it for myself though - Hubs won't touch anything that has the word squash in it - lol!

    1. We just started eating squash casserole a few years ago. We always grew up on breaded fried squash - oh my that is delicious. I was amazed how many different versions of squash casseroles there is. I hope you get to enjoy one this season. Hugs

  9. Cute summer stitch, Melisa! My eyes went immediately to the squash casserole! LOL I LOVE squash. Your recipe sounds great. I may have to try that. I loved my Mama's squash growing up. She would salt and pepper the squash, slice up onion rings to go in it and cover in water and let it boil down. Then she would throw in some good ole' butter and let it finish cooking down. My mouth is watering just thinking about it! LOL I make mine the same, when I make it, as I'm the only one who eats it, but it just doesn't taste as good as Mama's! Have a great weekend friend.
