Persimmon Bread Recipe and A Little Thanksgiving Decor

Good morning, Sunshine and Happy Happy Tuesday.

The persimmons are still dropping from the trees.

For the last couple of years, mom and I have been making Persimmon Bread. It is a yummy fall treat to enjoy with a spot of coffee. Though I have not made any yet, it is certainly on the agenda.

MOM' S PERSIMMON BREAD

YIELDS: 1 Loaf

INGREDIENTS:
2 eggs

1 1/2 cups of all purpose flour

3/4  cup of sugar

1/2 teaspoon of salt

1/2 cup of vegetable oil

1 teaspoon of ground cinnamon

1 cup of persimmon pulp

1/2 cup of chopped walnuts

1 teaspoon of baking soda

1/2 cup of raisins

 DIRECTIONS:

1. Preheat oven to 325 and grease a 9 " x 4" loaf pan.

2. In a small bowl combine flour , salt , cinnamon and raisins.

3. In a second bowl, blend eggs, sugar and oil. Mix in persimmon pulp and baking soda.  Fold into flour mixture and then pour into baking loaf pan.

4. Bake for 75 minutes or until a wooden skewer comes out clean when inserted into the middle.

5. Enjoy

In the past I   have  added  dried  1/4  cup of cranberries  with 1/4 cup of  raisins and substituted pecans for walnuts. It was very tasty as well.

Will you be cooking for Thanksgiving? Mr. Pinker and I will be cooking side dishes to take over to my Mom's on Thanksgiving Day. As of right now I have Green bean Casserole and Cranberry Marshmallow Salad along with Potato Salad  on the menu.

My sister will bring some sides as well. Mom is in full charge of the turkey and dressing. Mmm - my mouth waters just thinking about it.

Of course mac and cheese, stuffed celery , candied yams, mashed taters, baked beans and coleslaw are going to be included on the menu, but I am looking for some other sides.
Do you have any suggestions ?

Well , Sweeties, I am off to look through cookbooks. I hope you  enjoy your day and thank you for dropping by.

As always...

Happy quilting and stitching, ya'll

I Am on a Roll!

Good afternoon, Punkins. I am on a roll- a Pumpkin Roll that is !

So  grab your apron and let's head to the kitchen! We have fall baking to do !

I pulled out a fall apron for the baking season.

I'll pull out the ingredients. Can you grab a mixing bowl or two?   Oh, and do not forget the parchment  paper and tea towel.

My ingredients are all gathered.

And here is the recipe.

PUMPKIN ROLL

INGREDIENTS

1 cup of sugar

2/3 cups of pumpkin puree

3 large eggs, beaten

1/2 teaspoon of ground cinnamon

3/4 cup all purpose flour

1 teaspoon of baking soda

8 oz cream cheese softened

1 cup of powdered sugar

2 Tablespoons butter softened

1/4 teaspoon of vanilla extract

DIRECTIONS
Preheat oven to 375 degrees. Grease 10" x 15" jelly roll pan. Blend sugar, pumpkin, eggs and cinnamon. In another bowl mix flour, baking soda. Add to pumpkin mix. Blend till smooth. Spread on to prepared pan. Bake for 13-15 minutes or until top of cake springs back when touched. You can do the toothpick test as well. Baking time will vary depending on oven.  As soon as the cake comes out of the oven ,invert onto towel. Roll cake in towel with seam side down. Cool completely on a baking rack. In another bowl beat cream cheese, powdered sugar, butter and vanilla until smooth. When cake has cooled unroll from towel spread filling over cake. Roll cake up . Place in plastic wrap and refrigerate . Sift  powdered sugar on it before serving.

Doesn't the batter already look yummy? Excuse me if I sneak a taste.😋😀

Spread the batter evenly on the jelly roll pan.

I placed parchment paper down for easy clean up . I sprayed it with non stick cooking spray.

I better not forget to tap the pan a couple of time on the counter just to settle the pumpkin mix .

While the Pumpkin Roll is  baking, let me show you my newest finish-

Four Wonky Pumpkins Mini Quilt.

I pieced this little quilt last year. I  had 4 small orange scraps begging to be used and in no time flat I pieced this simple little quilt .

As soon as it was pieced , the sweet quilt made its way into a basket until the other day.

It took only a few hours to hand quilt it and bind it.  Now why didn't I finish it last year? Lol I don't know, but it is complete now and ready for fall  display.

Alrighty, y'all!   Mmm! Mmm!  The smell from the kitchen is divine. The  roll has come out of the oven. I inverted it onto a tea towel, removed the parchment paper and rolled it tightly . (Well I have to confess in the middle of this process I received a phone call- so not as tight as I would have liked) .  Let the cake cool completely before filling it.  When you are ready to fill, simply unroll, add the cream cheese filling to the center and smooth to about 1/2 inch to the edges in order to prevent as  much cream cheese from oozing out so much  when you roll.  Once you roll, wrap tightly in plastic wrap and place in the refrigerator.  Your pumpkin roll can be stored in the refrigerator for a few days or you can freeze them up to a month.

I do believe our pumpkin roll is cool. Let's have a slice. Oh yum!

Goodness those swirls are terrible. Remember , I was chatting away on the phone. Lol.  I have to tell you that I have  a personal preference for my pumpkin roll to be undercooked   . When it is chilled it is so moist and delicious especially after sitting for a day or two in the fridge, but that is just a personal preference and is not noted in the recipe.  I will try to take a better photo with the next roll.

I am so delighted you joined me today and thank you for helping me with the fall baking; it sure made the task a joy for me.  Now let's eat some cake! Have an awesome evening!

As always...

Happy  Stitching and Quilting, y'all

Sunflower Mason Jar - A Mason Jar Freebie- Maybe?

Good afternoon , ya'll. Yep 2 posts in a day, I would have done it all in one post, but it would have been waaaaay too loooooong. 🙄

If you missed this morning's post, click here to see my vintage Dresden Plate quilt and my tiered tray.

So let me start off by Boo Hooing 😢😭  and telling you  that I have been feeling a bit blue lately. Why you ask? Well , here we go again! Tech Issues!

Google Docs is giving me a fit, and I am not able to upload my freebie charts as jpgs. Uggggh! 😠😩😭 What to do?!?!

First off, I am not very techy, and I have to scan my charts and upload them from the USB. When I try to upload them, I get the message "this file type is not supported". All was ok until a week ago. I think Google has updated, and I have am just too tech dumb to figure what is going on. To say the least  I am almost in tears. Do you have any suggestions or ideas?

I have been stitching up a storm though.

In fact, I have been working feverishly  to squeeze in my Sunflower Jar for Sunflower September stitching.

Eeh! Let's do the wave!!!  I completed it.  Just a jar filled with sunshine. It certainly makes me smile.

This little jar stitched up quickly and there are only 7 floss colors in it. DMC 937, 898, 3345, 3347, 782, 3371 and 413.

So what I am going to try to do, is post the image of the chart  on my blog . I do not know if you will be able to print it or not. This is an experiment until I can find a solution if there is one. Let me know how it comes out on your end if you do try to print it.

Lookie at my little bears gifted to me from, sweet Joan. Aren't they the cutest? Thank you , Joan. Oh how I love these guys.

If you are interested in stitching the Sunflower Jar, please check out the images below.

Many of you know , but I always like to leave this little disclaimer.

I stitch my little designs for fun and to decorate my home. I feel very blessed by this community and love sharing my little charts, but I am not a professional designer. And I do not have professional software. Thank you for understanding that I  have to put each page on separate links because of the devices I use. I apologize for that.  These are images of the chart  or JPG s and not downloads.   I am always grateful for your kind encouragement , your visits, and for stitching my little designs.

If you are having trouble with  the above images and they  can not be saved and  printed, try right clicking these images .  Lol I am trying to figure this out.  Thanks again for understanding.

Something about Fall always makes me want to bake. I haven't tried these muffins yet, but they do sound so yummy.

Not sure why blogger has a large gap between the text.

Sunflower Pumpkin Muffins

12 muffins

INGREDIENTS:

1 Cup of all purpose flour

½ cup of packed brown sugar

3 teaspoons baking powder

1 teaspoon pumpkin pie spice

½ teaspoon salt

¼ teaspoon baking soda

¾ cup canned pumpkin

1 egg slighly beaten

¼ cup of  milk

⅓ cup of sunflower oil

1 cup of rolled oats

½ cup raw or roasted sunflower kernels ( if salted , omit the salt in the recipe)

DIRECTIONS

Combine flour, sugar, baking powder, spice, salt and soda. Mix well. Combine pumpkin, egg, milk and oil. Add to dry ingredients; mix only until well combined. Stir in oats and sunflower kernels. Fill muffin tins ¾ full . Sprinkle with topping. Bake at 400 degrees F. for 20 minutes or until wooden pick inserted near center comes out clean.

For topping: Melt 1 Tablespoon sunflower margarine. Mix with ⅓ cup of brown sugar, 3 Tablespoons of sunflower kernels, 1 Tablespoon of flour and ¼ teaspoon of pumpkin spice until crumbly.

Oh, Yum! Don't they sound delicious?

The rest of the day will be spent in the Quilt Nest. I have been on a roll piecing away. I hope to work on some blue blocks for the Rainbow Scrap Challenge. I have been absent from participating in that challenge here lately. But I have had good intentions.

Thank you for the afternoon visit and  for understanding. As always...

Happy  Stitching and Quilting, ya'll

Gobble , Gobble - Turkey Creek Manor- A Fall Freebie

Gobble Gobble! Are you getting ready for that big day of eating? I can not wait. Mom always fixes the best turkey and dressing; it is so moist. My daughter has already put in her requests for a big batch of macaroni and cheese  and rolls .  Of course we have mashed potatoes, deviled eggs, green bean casserole and so much more. To be honest , we eat till our bellies pop.

Usually, the family gathers at moms to eat and watch the kiddos play. Later in the evening we are  off to Mr. Pinker n' Punkin's parents where we will gobble up some more.

Well I have been buzzing all around trying to get the Thanksgiving decor up in the kitchen and foyer and Christmas in all the other rooms.

I still have some tweaking to do. But it is coming along.

Yes ! I decorate for two holidays at the same time but hey, at least they are in separate rooms. Lol.

For the last couple of years ,I have been trying to build up my Thanksgiving stitching. I do not have a lot , but I am working on it. I love turkeys.  I had never seen a wild turkey in person until I met my hubby. Now I see them all the time in the fields across from the road.  They are fun to see. Of course we always try to count how many there are.  Well anyway, I decided my next house was going to have a turkey on top. This little stitch is called Turkey Creek Manor.

Now, I have to admit I like my stitches sometimes to be a little "off" . Yep "off" .- See the house is not centered and the quilt blocks are falling of the edges on the top and right sides. Lol. That just makes me happy.

This is a small stitch measuring 59 x 63. I stitched mine on 14 count aida which gives it a size of 4 1/4" x 4 1/2".

I stitched Turkey Creek Manor using 9 DMC floss colors. They are 435, 310, 3033, 975, 355, 898, 3371, 3345, & 356.

I finished mine into a simple pillow just like I did the other houses that I have been working on. I am  working on house stitches for a big ole' dough bowl display in the future.

If you would like to stitch Turkey Creek Manor, check out the pdf's below.  You could have it stitched up and out on display before Thanksgiving. Each page is on a separate pdf because of the devices that I use ( Remember I am not a professional designer; I am doing this for fun. )

For the instruction page,  click  here  .

For the color chart pdf , click here .

For the black and white  chart pdf, click here.

If you missed the other houses ,click on the names to visit the posts. They are Crow Creek Saltbox, Willowisp Manor of Holler Lane, and Ophelia Manor of Punkin Holler Lane.

Now how about a pumpkin recipe. Like I have said before, when it turns fall, I get in the mood to bake. Well this is a vintage  recipe from Libby's in 1982. It  is called Libby's Pumpkin Nut Bread. Yum Yum!

LIBBY' S PUMPKIN NUT BREAD

Ingredients:

2 cups of sifted flour

2 t of baking powder

1/2 t. of baking soda

1 t of salt

1 t of ground cinnamon

1/2 t ground nutmeg

1 c of Libby's Solid Pack Pumpkin

1 c of sugar

1/2 c of milk

2 eggs

1/4 c of butter or margarine softened

1 c of chopped walnuts or pecans

Directions:  Preheat oven to 350 degrees. Sift together first 6 ingredients. Combine pumpkin, milk , sugar and eggs in a mixing bowl. Add dry ingredients and butter.  Mix only until flour is softened. Stir in nuts. Bake in a well greased 9 x 5 x 3 " loaf pan for 65 minutes or until when a toothpick is inserted into the center that it comes out clean.  Cool for 10 minutes and remove from loaf pan.

And now I am off to do a little baking myself and hopefully settle into a  little stitching . Hope you have a blessed day and thank you for visiting and as always...

Happy stitching, ya'll

Melisa
