Persimmon Bread Recipe and A Little Thanksgiving Decor

Good morning, Sunshine and Happy Happy Tuesday. 


 The persimmons are still dropping from the trees.

  
For the last couple of years, mom and I have been making Persimmon Bread. It is a yummy fall treat to enjoy with a spot of coffee. Though I have not made any yet, it is certainly on the agenda. 

MOM' S PERSIMMON BREAD

YIELDS: 1 Loaf

INGREDIENTS:
2 eggs

1 1/2 cups of all purpose flour

3/4  cup of sugar 

1/2 teaspoon of salt

1/2 cup of vegetable oil

1 teaspoon of ground cinnamon

1 cup of persimmon pulp

1/2 cup of chopped walnuts

1 teaspoon of baking soda

1/2 cup of raisins

 DIRECTIONS:

1. Preheat oven to 325 and grease a 9 " x 4" loaf pan. 

2. In a small bowl combine flour , salt , cinnamon and raisins. 

3. In a second bowl, blend eggs, sugar and oil. Mix in persimmon pulp and baking soda.  Fold into flour mixture and then pour into baking loaf pan. 

4. Bake for 75 minutes or until a wooden skewer comes out clean when inserted into the middle. 

5. Enjoy

In the past I   have  added  dried  1/4  cup of cranberries  with 1/4 cup of  raisins and substituted pecans for walnuts. It was very tasty as well. 




Will you be cooking for Thanksgiving? Mr. Pinker and I will be cooking side dishes to take over to my Mom's on Thanksgiving Day. As of right now I have Green bean Casserole and Cranberry Marshmallow Salad along with Potato Salad  on the menu.  

My sister will bring some sides as well. Mom is in full charge of the turkey and dressing. Mmm - my mouth waters just thinking about it.

 Of course mac and cheese, stuffed celery , candied yams, mashed taters, baked beans and coleslaw are going to be included on the menu, but I am looking for some other sides.

  1. Holey Moley that's some menu!!! All I ever cared about was turkey (the dark meat), mashed taters, gravy, jellied cranberry sauce and stuffing. If there's even one raisin in that stuffing I ain't eating it. No ma'am - no raisins or candied yams. No, No, No!!!

    1. No candied yams? No raisins? Hee! Hee! I have to admit that turkey and the dressing is my favorite and I would be fine and dandy with just them . LOL. We will have about 20 + people so it will be a good gathering. Oh yes, I have 1 more sister and a brother. We are lost without our baby sis though. Have a terrific Tuesday, sweet Darlene. Big hugs.

  3. No turkey or other goodies. We do not have Thanksgiving here in Germany as you have. We have Erntedankfest, but this celebrated in church.
    The menue sounds yummy. Enjoy!

  4. Sounds like a wonderful Thanksgiving Dinner. I have one that doesn't like turkey and another that doesn't like ham, so I think the plan this year is for brisket. There will be cornbread casserole and roasted winter vegetables. Not sure what else is on the menu as Grad Girl and My Guy are the key cooks.

  5. Found out yesterday that I will be making a pecan pie and corn casserole (corn pudding to many). We'll be headed to hubby's family for the day.
    Sounds like you're going to have a great Thanksgiving with family.
    Never had persimmons and not even sure where to look for them ;-)

  6. My goodness Melisa! That is a lot of food, and it all sounds so good. I'm with Darlene, no raisins in anything! But that cranberry fluff salad looks delicious.
    Instead of candied yams, I make Weezie's sweet potato souffle (made with eggs, sugar, butter, and a streusel topping) and eat it all myself - no one else will touch sweetened sweet potatoes - lol! My daughter said she is bringing a "savory" sweet potato casserole - looking forward to trying it. My son and DIL always serve corn at their house, so I make buttered corn for them. I roast 2 or 3 bone-in turkey breasts, since no one likes dark meat, and all of us look forward to turkey sandwiches for several days! I really don't have any suggestions, other than I always make homemade rolls. I could make my meal on rolls and all the side dishes alone!

  7. BTW, the buttered corn I serve is just corn, not on the cob. I buy a package of frozen and cook it with a teaspoon of sugar, a dash of half and half, and some butter. My DIL always raves about how good it is. She says all she does is open a can of corn - lol!

  9. what time's supper on Thanksgiving day? sounds like a feast fit for everyone. a little bit of this and a little bit of that. do you bring your pillow to lie down after your dining experience? i sure would. then i could go back for more. yummy!!! a perfect day and we have so very much to be thankful for.   11. Your Thanksgiving side dishes all sound yummy! I've never had persimmons, but I bet the bread you make with them is very tasty. I need to start planning for Thanksgiving dinner, too. Those little trees you're stitching look fun - can't wait to see what else goes with them!

  12. I will probably be spending Thanksgiving alone again this year so I am looking at fixing my favorite sweet potato casserole and a pecan pie all for myself! Yum! I have lots of sewing to do so I will spend it in the studio watching football and quilting.

  13. I do love persimmon! We buy them at Costco as there are no persimmon trees in Minnesota, that I know of. And we eat them before they can get mushy enough for persimmon bread. I'll keep it in mind, if a couple of them slip by and become too soft to eat raw.

  14. I did not even know you could buy persimmons; they are not native to Wisconsin. I think I would like to try it. My daughter and her beaux are coming for Thanksgiving and I am so grateful. We just do the typical turkey, mashed potatoes, stuffing and pie. Football, family and food. What more could you ask for. Happy Thanksgiving to YOU and yours.

  15. No Thanksgiving dinners in New Zealand either, although some do have roast Turkey on Christmas Day. I dont think I've tried a persimmon.

  17. Sounds like a great variety of sides! The persimmon bread sounds delicious. My husband's and my plan is to keep it simple. We are planning smoked ribs and potato salad. If I'm feeling that I can bake, I'll make a cobbler. (I'm still working on rehabbing my knee!)--TerryK@OnGoingProjects

  18. All that food sounds wonderful, Melisa! You are so blessed to still be able to celebrate with your Mom. I would love to have Thanksgiving at Mama's again. We always have sweet potato casserole and my daughter always requests corn casserole. Chicken Legs has spoiled them on his fried turkey breasts! It will just be us this Thanksgiving as the kids are going off in the camper. We will probably eat out! LOL We have our big family gathering and food at Christmas, so I'm really looking forward to that! Hugs.

  21. I have never tasted a persimmon. In the picture, they look sort of like plums, except for the top area. Are they super sweet & juicy? I may try subbing some plums for this recipe. Plum bread sounds sort of yummy, too. Your menu sounds pretty yummy. Maybe, a veggie tray or olives & pickles or rolls - or are those just a given? 🙂 I plan on doing a broccoli & corn casserole for our vegetable side. We do an old fashioned cooked cranberry sauce, usually. I haven't decided on what pies to do yet. I have to admit that all the leftovers and no big cooking for days after is a favorite part of this holiday for me. I love where the quilty snow stitch is headed, So pretty!

  22. Great menu! I make green bean bacon bundles for all the holiday gatherings. I also like sweet potato casserole and spoon bread corn. Yummy thanksgiving treats! I also would get in trouble if deviled eggs weren’t at the table as well. Me oh my! 😊😊😊
